Grilled Cabbage Wedges with Spicy Lime Dressing

As summer temperatures rise, it's time to take our cooking outdoors, and our latest recipe is sure to heat up your next barbecue. This week's star vegetable, courtesy of Davis Natural Produce, is a staple that is too often overlooked - the humble cabbage. We've reinvented it in a simple, zesty dish that's perfect for those warm summer nights: Grilled Cabbage Wedges with Spicy Lime Dressing!

For the Spicy Lime Dressing:

Instructions:

  1. Get your grill going on medium-high heat. In the meantime, prepare your cabbage by cutting it into 8 equal wedges. Keep the core intact so the wedges hold together. Lightly brush the wedges with olive oil on all sides, then season with salt and pepper.
  2. Place the cabbage wedges on the preheated grill. Let them cook for about 5-7 minutes on each side, until they are nicely charred and have started to soften.
  3. As your cabbage is getting that beautiful char, you can prepare the spicy lime dressing. In a small bowl, whisk together the lime zest, lime juice, olive oil, honey, minced garlic, and red pepper flakes. Season with salt and pepper to taste.
  4. Once the cabbage is done, take it off the grill and immediately drizzle the spicy lime dressing over the top while it’s still warm. The heat from the cabbage will blend wonderfully with the zingy dressing, making each bite a delightful fusion of smoky, spicy, and tangy flavors.
