Here, we pair that just-picked corn with juicy nectarines, a little zing from red onion, fresh cilantro, and a kiss of heat from jalapeño. The whole thing gets lightly dressed in a lemon white balsamic vinaigrette (you can find our fave over at North Conway Olive Oil Company)— bright enough to wake up the flavors, but subtle enough to let the corn really shine.

Ingredients

- 2 ripe nectarines, sliced or diced
- ¼ cup red onion, finely chopped
- 3 Tbsp fresh cilantro, chopped
- 1 medium jalapeño, deseeded & thinly sliced or diced
- 2 ½ Tbsp lemon white balsamic vinegar (from North Conway Olive Oil Company)
- 1 tsp fresh lime juice
- 1 ½ tsp honey (or agave)
- 2 ½ Tbsp extra virgin olive oil
- Salt & freshly cracked black pepper, to taste
Instructions
- Cook the corn.
Grill for a smoky char, boil for sweetness, or roast until caramelized. Let cool completely, then cut kernels from the cob into a large mixing bowl. - Make the vinaigrette.
Whisk together lemon white balsamic, lime juice, honey, and olive oil until smooth. Season with salt and pepper. - Assemble the salad.
Add nectarines, red onion, cilantro, and jalapeño to the corn. Pour dressing over the top and toss gently until coated. - Chill & serve.
Cover and refrigerate for 10–15 minutes to let flavors meld. Serve slightly chilled or at room temp.
Pro Tip: If you want to take it up a notch, grill the nectarines for 1–2 minutes per side before slicing — the char adds an irresistible depth of flavor.
