Ingredients
For the Salmon:
- 2 center-cut salmon pieces (approximately 5-6 oz each), skin-on or skinless
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 1 garlic clove, minced
- 1 tsp sesame oil
- Pinch of chili flakes (optional)
For the Broccolini:
- 1 bunch broccolini from Davis Natural Produce, ends trimmed
- 1 tbsp olive oil
- Salt and black pepper
For the Fresh Vegetables and Fruit:
- 1 small carrot, peeled into ribbons
- ½ medium cucumber, thinly sliced
- 1 ripe peach, thinly sliced
- 1 tsp reserved marinade (from above)
For the Spicy Mayo (Optional):
- 2 tbsp mayonnaise (regular or light)
- 1–2 tsp sriracha, to taste OR Thai Sweet Chili Sauce
For the Bowl Base and Toppings:
- 1 cup cooked brown rice or quinoa
- ½ avocado, sliced
- 1 tbsp toasted sesame seeds
- Optional toppings: sliced green onions, pickled ginger, chili flakes
Instructions
1. Preheat Oven
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the Marinade
- In a small bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, grated ginger, minced garlic, sesame oil, and optional chili flakes.
3. Marinate the Salmon
- Place the center-cut salmon pieces on one side of the baking sheet.
- Spoon the marinade generously over the salmon, reserving 1-2 teaspoons for the cucumber and peaches later.
4. Prepare the Broccolini
- On the other side of the baking sheet, toss Davis Natural Produce broccolini with olive oil, salt, and black pepper. Spread evenly.
5. Roast the Salmon and Broccolini
- Roast for 12-15 minutes, depending on the thickness of the salmon.
- Broccolini should be crisp-tender and slightly charred. Salmon should be opaque and flake easily.
Optional: Broil for the last 1-2 minutes for extra caramelization.
6. Toss Vegetables and Fruit
- In a small bowl, gently toss the sliced cucumber and peach with the reserved marinade.
7. Prepare Spicy Mayo
- Combine mayonnaise and sriracha in a small bowl, adjusting spiciness to taste.
8. Assemble the Bowls
- Divide rice or quinoa into bowls.
- Top with roasted broccolini, a salmon piece, carrot ribbons, marinated cucumber, marinated peach slices, and avocado.
- Drizzle spicy mayo over the top.
- Sprinkle with sesame seeds and optional toppings.
